For those of you that think you don’t like beets, please give these a try! I love Terra Chips – those root vegetables sliced thin and fried to crispy perfection. And the bright red beet chips are among my favorites. So I thought I’d try a homemade baked version – and they actually turned out to be satisfyingly crisp and savory.

If you like Terra chips, you’ll LOVE these.
Ingredients
- 2 large red beets
- Kosher salt
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with foil.
- Peel the beets and cut as thinly as possible – trying for a uniform thickness. Toss in a bowl with olive oil and salt. Spread on baking sheet in a single layer.
- Bake in oven 20 minutes. Turn all slices over and continue to bake another 20-25 minutes.
- Watch closely toward the end as the high sugar content makes these chips burn rather rapidly.
- Sprinkle with additional salt and serve immediately.
Notes
You can also try this with turnips, parsnips, and any root vegetable really!
these were great. i think i sliced them too thin the first time (thinnest setting on my mandoline) can’t wait to try them again!
